I design your menu with you ahead of time. Typical dishes could be 25 day old baby lamb or pig, bulls tail slowly cooked for 8 hours in wine n herbs from the land. Even River fish, or La Mancha egg plants, vegetables from my garden. I cook to Michelin star standard but I will never want a Michelin star as I refuse to work in a restaurant. Most star chefs on TV are rude and disrespectful to other chefs and kitchen staff (Mr Rhodes ). I only cook for you in my private home by the 10th century castle. I’ll connect the dishes to the history of the African people who built the castle over 1000 years ago: La Mancha Spanish farm cuisine with an Air of African Arabic influence.
